Which one is correct?
Are these sentences correct? �This summer holidays were fantastic. � and �This summer holidays I went to London. �
Why not �These summer holidays I.... �???

Are you sure about "These sumer holidays were fantastic" meaning this past summer holiday (of this year)?
To me, "these summer holidays" means that we are selecting a few separate summer holidays from a collection (set, group) of the summer holidays we have experienced.

Actually, to me... I �d pick the present perfect tense.
This summer holiday has been fantastic... - if you are referring to "this year �s".
Now... if you are looking at an album of pictures and you are pointing to some photos, you could say...
"Oh look, this Athens, no!?"
"Oh, yes. This summer holiday was fantastic." - because you are referring to a past event...
