I think the answer is:
 
How could I forget watching the show? = I watched it, and it �s impossible to forget it
 
How could I forget to watch the show? = I actually forgot to watch the show, I can �t believe it but I forgot. I didn �t watch it

You are right and that is a fine interpretation of the first sentence, but, but, but...
To watch and to remember  are not the same thing!

If I saw a show that really made an impression, I would have said -
How could I have forgotten that show?  It was fabulous or one of my favorites!

To forget watching a show, is like being aware of what is going on in the theater but not what �s going on - on stage.  There are lots of interpretations!
