Wash the dishes is general - it could include plates, cups, bowls etc
Wash the plates (a false friend in many languages) is specific - you are only washing plates - not bowls, cups or anything else.

generally we say wash the dishes.

I agree with isahorton  - It �s wash the dishes if you are referring to the general act of washing up. If you are washing just the plates, you �d use the other. Also... it �s quite common to say "do the dishes".
Jim is doing the dishes for me tonight.

Fully support. By the way you can say just "wash up" which means
(Chiefly British) To wash dishes after a meal. |

as my collegues said before dishes includes plates but you can say wash plates if you �re washing only plates but not other kitchen items. take care |
