Because you have not stated if your students are adults or children, elementary or advanced it is difficult to know what to give you.
 
I don�t know of a specific text, but if you google paralympic then you will find numerous sites about disabled athletes.  Here is one to start with http://www.paralympic.org/release/Main_Sections_Menu/index.html I am sure you will be able to adapt something from these sites to the level you want.

I found this ws (intermediate level) on eslprintables about a paraplegic who climbs Mt Fuji by bverstegen
