I �ve heard �I �ll take ... � used for ordering.
Also, when I was in America and Canada I heard people say �Can I get ... (a coffee)? �
There are many different ways you could order a coffee. Likewise, waiters and waitresses can ask:
What can I get you?
What �ll you have?
What would you like?
What are you having?

We typically say, "I will take a cup of coffee." We are usually asked if we want coffee whenever going out for breakfast. It is normally the first question that is asked after or before getting the menu. |

take a coffee is not American English.
We usually say I �ll have coffee or I would like some coffee.
I think you are getting it confused with "How do you take your coffee?" meaning black, with sugar or with cream or with both sugar and cream.
In this instance, the answer will be �I �ll take my coffee black" and etc.
