Software is not that easy to create if you are not an IT expert. But you can use free educational software to make interactive online / offline exercises with / for your students.
Try Hot Potatoes or Eclipse crossword maker - EclipseCrossword.
Free Software / Website for crw, wrs, scramble, reading GAMES
If you don �t know what topics to choose - try to follow the vocabulary /grammar topics at eslprintables.
BTW - our englishexercises.org are great source of interactive online exercises.

I �ve just finished a teacher development course in IT and created a website together with three great fellow teachers of mine. It �s about Wallwisher, a very simple to use web based application. It might give you some ideas. Wallwisher in ELT
