							| to see is a verb which cannot be  put in the continous form, because it ´s in the category of sense verbs(appear-hear-see-seem-smell-sound-taste)

							| When "see" means "meet" or "visit", as in "see the doctor", then it can be put in the continuous form.

							| ´We ´re going on holiday next week and we ´re seeing the beautiful views ...... It sounds fine to me, as a native English speaker.
´We ´re going on holiday next week and we ´ll be seeing the beautiful views sounds better. I ´m afraid I can ´t explain why!

							| As mohamedthabet hinted, see is one of those polysemic words English abounds with. In fact, I remember a ´quiz where see was the answer to what the following concepts have in common lexically (apart from the obvious meaning of ´perceiving with the eye ):
 (1) understanding; (2) judging; (3) experiencing; (4) finding out; (5) dating; (6) consulting; (7) visiting; (8) ensuring; (9) escorting; and (10) sending away?

Polysemy just means the co-existence of many possible meanings for a word (or phrase), so this particular verb can be either stative or dynamic depending on its meaning. We´re seeing - as something you´re definitely going to do in the future - could obviously mean ´visiting (no. 7 above)
