If you say -

Sha hasnt ridden her bike since she was 7.

this indicates that she doesnt ride it anymore and that she stopped riding her bike when she was 7.

If this is your intention, then it sounds great to me.

If you say,

Sha hasnt been riding her bike since she was 7.

Then its a strange sentence structure and is saying that she still rides her bike now, but that it wasnt from the age of 7, but perhaps another age, like 10.  If this is what you want to say , then its better to say,

Sha has been riding her bike since she was 10.

Sorry to throw a spanner in the works, but it depends on what you want to say.
