THE NOUN FUIT COUNTABLE OR UNCOUNTABLE?

Embarrassed I NEED YOUR HELP!!! IM A LITTLE CONFUSED ABOUT THIS, WHILE I CAN SAY: I DONT HAVE ANY FRUIT (UNCOUNTABLE) I CAN SAY TOO: WE NEED TO EAT A LOT OF FRUITS AND VEGETABLES.
WHAT DO YOU THINK ABOUT THIS?
VEGETABLE, COUNTABLE NOUN AND FRUIT, UNCOUNTABLE NOUN.
THANK YOU SO MUCH!!
