Hi everybody.
Is is possible to say Her nationality is Canadian ?
And if you ask What �s his father �s job? is it right to answer His father �s job is an engineer or should be He is an engineer?

I don �t think so.
You should say: She is canadian
or
She is of canadian nationality
Hope it heps

It isn �t wrong to say, "Her nationality is Canadian," but most Americans would prefer "She is Canadian." (And plemos, we always capitalize countries and nationalities in English.)
