                In the sentence  - I haven �t ...........................paper in the office. What is correct to use MUCH OR MANY?

You say much paper or many sheets of paper because you can count sheets.

you should say much because it is a negative sentence, you us much or many for negatives and interrogatives and a lot of for affirmatives, although in common usage you can do as you want.  but there �s an error in the sentence itself:
you should say: I don �t have  or  I haven �t got but you can �t say I haven �t.
