I am trying to think of singular nouns that end in S although they are not plural: lyrics, charts, outdoors, customs (Dover), lens, blues, in-laws, origins, politics, baker�s, butcher�s, classes (=education), holidays, draughts, Maths, Mathematics, Statistics, Physics, linguistics, atletics, gymnastics, accoustics, stylistics, tactics, optics, electronics,  perks, wages, earnings, series, species, spices + herbs, suburbs,  dominoes, billiards, darts,
rhinoceros, ethos, cosmos, crisis, radius, fungus, , diabetes, axis, basis, crisi, oasis, analysis, thesis, nucleus, stimulus, terminus, focus, bacillus, corps, measels, mups

Nouns - always plural - no singular - (+aggregate nouns):

congratulations, contents, thanks, goods, stairs, news, species, barracks, crossroads, headquarters, gallows, ancestors, forebears, descendants, mews, guts
a pair of: trousers, knickers, pyjamas, headphones, scissors, shears, tongs, compasses, binoculars, tweezers, scales,

Plural nouns which are rarely singular or there is a change in meaning:
jeans (x Jean), pants (x pant), shorts (x short (adj.), trunks (x trunk), tights (x tight), origins (origin), highlights (x highlight), characteristics (x characteristic), clothes (x cloth), glasses (x glass), means (x mean), arms (x arm), quarters (x quarter), customs (x custom), spectacles x (spectacle), goods (x good), times (x time), works (x work), woods (x wood),

Anything else comes to your mind? I would like to make a poster on tricky nouns...
