Which sentence is mostly correct (a) or (b)
(a) I used to escape when I see a cat.
(b) I used to escape when I saw a cat.

b)  - but it should be run off/run away/make myself scarce, etc, not escape.

Right.  To escape, gives the meaning of being trapped or held against your will. 
I would change the sentence and not use �escape. �  

Make myself scarce... I don �t know. Sounds as if, you knew that cat was going to visit you.  

This one makes sense.

b).  I used to run away, when I saw a cat.
