His father ..... just a week ago today.
What is the best variant to fill in the gap "died" or "has  died"?

Died. Once you mention the time, it īs past simple.

the key word here to determine the tense (past simple "died" BTW) is ago

don īt be confused by just as it is part of a phrase here and it has the meaning "only", not "recently" which would require the present perfect tense form.
