hi colleagues,
 
I heard Simon in the voice use this expression "many good luck" and I want to know if it is formal English what it means to use "many" with uncountable noun. Thanks beforehand.

Was it part of a sentence such as " I had no idea there were that many good luck symbols" or 
"...interactions of monetary and fiscal
policies and of the many "good luck" factors giving
the USA the benefit of vigorous and...
 ? Otherwise it makes no sense, to me.

I agree --- it won �t make sense unless it is in the right context. 
 
Many good luck symbols -- many describes the symbols, not the luck.
 
Symbols are countable. So you can use "many" to indicate quantity.
 
"Luck" is not countable. So "many" can �t be used to describe it.
 
You need to sat "a lot of good luck" or  "much luck".
 
"Much" is for uncountable nouns.
