This is such an interesting (and entertaining) conversation.
 
In the land downunder, it is countable and uncountable
 
- Please buy a lettuce = buy one whole lettuce (usually iceberg)
 
- Please buy some lettuce = buy looseleaf of bagged lettuce (specialty lettuce such as cos, rocket, butter, blends etc)
 
No-one refers to heads of lettuce anymore. It�s implied. One lettuce = one head of lettuce.
