Someone I admire
This is a nice activity where students can describe someone they really admire. I usually ask them to think about someone they know personally, instead of doing it on a movie star. In some of my groups, I had really good text and I asked some of them to send these texts of appreciation directly to the person.

This is a fun way to explore rhymes. Try to prepare it a couple of classes before Christmas... so that the last class before leaving for the holidays, you can sing the song with them.
