Someone I admire
This is a nice activity where students can describe someone they really admire. I usually ask them to think about someone they know personally, instead of doing it on a movie star.
In some of my groups, I had really good text and I asked some of them to send these texts of appreciation directly to the person.

Project - your OWN mythology
After reading about Greek Gods (powers, relationship and all), I asked the students to make their own mythology according to a specific theme (of their choice).
Its very interesting to see how the students have imagination.
