This is a good activity to discuss dreams and what your dreams mean. Students write down every morning for a week what their dreams were about. Then they try to look at a pattern. After students complete this activity the class can then look at what certain dreams could mean.

My Great Canadian Experience
This project was done by students who were studying in Canada but you can change it to any country. Students had to video tape themselves or make a video adding pictures and their voice to describe the time they spent in Canada. It was a great assessment tool for writing and speaking!
